Yummy Carrot and Apple Muffins

The muffins are lovely food, especially those which are loaded with fiber.

Here you can find the recipe that really takes full advantage of fall flavors and is a great opportunity to have them for a longer period as you can store them well in the freezer.

Not only your kids, but you can enjoy if you prepare according to the following recipe.

INGREDIENTS: for 12 muffins

3/4 cup almond flour

1/4 cup Oatmeal, ground

3/4 cup coconut flour

1 tsp Baking Powder

2 tbsp. Flaxseed, ground

1 tsp Cinnamon

1 tsp Baking Soda

1 cup Carrot, grated

1/2 cup Honey

2/3 cup Unsweetened Applesauce

1 medium Apple, grated

1 Egg or 1/3 cup Egg Whites or 1/3 cup extra Applesauce

DIRECTIONS:

While you are preheating the oven to 190°C/375°F, in a bowl, mix flour, flaxseed, oatmeal, baking soda, baking powder and cinnamon.

In a separate bowl, stir together eggs (or replacement), honey, applesauce and grated carrot and apple.

Combine both mixtures, stirring them well.

Fill the muffin tins and bake for around 15-20 minutes, or until a skewer inserted removes cleanly.
